On Thursday, December 4, 2025, SMEY protagonize a new edition of IZBrunch, the campus networking series where “science meets science.” This new edition theme is “Yeast – small organisms, big possibilities” putting the spotlight on yeast biodiversity as a driver of next-generation biotech innovation.
And for SMEY, this one feels extra special: our lab is located at IZB. So this isn’t just a conference stop for us — it’s a chance to open our doors to neighbors, partners, and future collaborators right here on campus.
What we’ll share: NOY in action
At IZBrunch, we will present NOY — our AI-driven Neobank of Yeasts, built from over 1,000 non-GMO strains and designed to systematically explore yeast biodiversity for lipid and enzyme cultivation and discovery.
Through NOY, we’ve already identified 200+ new unique oils and more than 2 million custom enzymes, producing and scaling sustainable cultivated alternatives to high-value oils such as cocoa butter, and avocado.
Our latest discovery tool, Enzyme Searcher, gives access to more than 2 million custom enzyme sequences accessible for rapid discovery of novel, IP-free enzymes — accelerating ingredient discovery and biocatalysis workflows.
Our keynote will be delivered by Dr. Pavel Elizarev, SMEY’s Chief Scientific Officer, who leads the development of cultivated oils using high-performing yeasts and precision fermentation.
A perfect campus match: brewing meets biotech
IZBrunch also features a keynote from the Weihenstephan Research Brewery at TUM on new yeast-driven flavor profiles for the beer of tomorrow, showcasing how under-used strains unlock surprising sensory worlds.
